the 2 tiny little remaining shoots weren’t touched, theyre just real fresh growth ..all I cut was the main stem

Ya but if you cut only down the leaf and left some still growing it will be fimmed. And that’s what it looks like.

Personally I fim on purpose. Can get 2-6 new growth shutes instead of just 2 from topping. Preference tho
