Do you see the word "some" in definition 3 or 4? The first definition points out it means to strip and the following definitions just clarify that it can happen in nature and not just by man.Four definitions of defoliation

to destroy or cause widespread loss of leaves in (an area of jungle, forest, etc.), as by using chemical sprays or incendiary bombs, in order to deprive enemy troops or guerrilla forces of concealment.
to lose leaves
(of a tree) having lost its leaves, especially by a natural process.
By definition 3 and 4 the plant defoliate itself by nature. So there’s my answer.
