So today was my wife's bday and with cases of covid blowing up around us we decided we weren't going anywhere to celebrate. I let her pick what she wanted me to make and she chose elk steak, homemade mac n cheese, and salad. Some tomatoe and avocado bites to go with the steak and it was a pretty tasty meal.

Oh and not for dinner tonight, but I scored 15 pounds of bacon there other day for 16 bucks, couldn't pass up the deal lol. Packaged into 1 and 2 pound portions, vacuum sealed, and into the freezer.

Damn tasty man, some of the best wild game there is imo. The steaks are best cooked rare to med rare, def don't want to over cook them they can get dry and tough. I have a spicy butter sauce that I'm known for with elk steak, it's a marinade, baste, and dipping sauce that people can't get enough of. But tonight we just seasoned and seared, little worcestershire too.

So I took some smoked salmon out of the freezer and made fish tacos with it. Frickin amazing, nice smokey flavor in the beer battered fish. Made a chipotle sauce to go with it. One of those meals that I just wanted to keep eating lol
