im south Carolinian hence the chow chow. I usually just do slaw and mustard on smoked pork but didn't feel like making the slaw. I covet that cut of beef I think about as much as Brazilians do so I call it picanha out of respect. that cut doesn't get the respect it deserves here in merica imho.
