Blue Cheese seedlings growing ultra slowly

First grow.

They have been like this for about 5 days, and i really don't see any progress. Water pH is about 7 with high calcium amount. Have not yet started feeding them. Watering about once every day. They are getting 8 hours of natural sunlight a day (im living in a place with limited sunlight). Is there anything i can do?

Maybe too much water. I would let the soil dry out a little so the roots stretch downward.
Even with the limited light they should be bigger.

Funnily, i stopped watering them a single day, and they all all of the stems fell over, like they were dying. So underwaterting scares me a bit now.

You will not underwater them, it is really hard to do.
I can;t make out if you are using soil or just coco coir strands, either way, the mix does not look like it drains or breathes well, and that first picture looked like the nutrient mix was a little too hot for a new seedling. They are never going to reach their full potential, but if you look after them nicely, they will get better in 4 to 6 weeks. This is probably going to set you back. If getting new seed is a problem, I'd veg them until I can take cuttings.

You certainly have to watch how much water you give them in some media. Adding just a bit of water to soil is not a good thing to do. Neither is having so much soil to roots ratio in a large pot, that the plant couldn't drink it dry if it tried to.
