Pistils usually change to a darker color when dried ....bud can change color quite a bit after cure ...for the better IMO
OGK after dry going into cure jars
Same OGK several months after curing
Quite normal and I think curing makes the bud more colorful and brings out the flavorful smells of the strain ....when done rite ....I see no issue OP

But, in general, yes, the green chlorophyl will oxidize over time and lose some of the green -much the same way blood comes out red but then dries brown...It's all light and oxygen that does it. If you want to slow down the oxidation, then you have to get rid of the oxygen and exposure to light when you store it. You can get a vacuum sealer, some oxygen absorbing packets and some Mason jars and then vacuum seal the jars with one of the packets inside....keep the jars in a cool, pitch-black area and you can slow down the oxidation and prolong the shelf life.
Some people prefer to allow the green to go away before they smoke it...Others prefer the green flavor component. You can tailor some of the flavor profile by controlling the oxidation process -kind of like how a wine maker does with wine.
Your plants pistils foliage is on the yellow side of red, some are purple because they are on the blue side of red. Chlorophyll has no red and that leaves it on the blue side of yellow and that makes green.
When chlorophyll is removed from a leaf, it leaves the plants true color behind. Happens ever Autumn.
