My favorite brownie recipe

So I noticed there aren't really any actual recipes, at least none I have come across. These are my favorite brownies ever and so easy to make. They are called copy cat cosmic brownies, like the ones you can buy packaged but way way better. To make them medicated just replace the butter with 3/4 cup of canna oil or budder. My preference is coconut canna oil. I also use 1 cup packed brown sugar and 2/3 cup granulated sugar and adding nuts (pecans, walnuts even seeds) is a must. The topping is optional and not something I generally do but ganache isn't hard to make.

Ingredients
For the Brownies:
  • ¾ Cup Unsalted Butter (1½ Sticks),
  • 2 Eggs
  • 1 Cup Granulated Sugar
  • ⅔ Cup Light Brown Sugar, Tightly Packed
  • 2 Tablespoons Milk
  • 2 Teaspoons Vanilla Extract
  • ¾ cup Un-Sweetened Natural Cocoa Powder
  • ¾ cup all-purpose flour
For the Topping:
  • 1½ Cups Semi Sweet Chocolate Chips
  • ½ Cup Heavy Cream
  • 1 Cup M&M Minis
For the Brownies:
  1. Preheat oven to 350 degrees F. Line a 9x9 inch pan with foil. Spray with non stick spray.
  2. In a large bowl, melt butter in the microwave for 1-2 minutes.
  3. Whisk in sugars, eggs, milk, and vanilla. Then whisk in cocoa powder until smooth.
  4. Add flour gradually, until combined.
  5. Spread batter in prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  6. Heat heavy cream in a medium sauce pan. Add chocolate chips. Stir occasionally until smooth.
  7. Pour ganache over brownies. Smooth with an offset spatula.
  8. Sprinkle with M&Ms. Refrigerate until the ganache has set.

Have you ever tried to bake them in muffin pans? I tried and they came out like bowls...not sure if I was doing something wrong or what. I will try this recipe with my next harvest! Thanks!

LOL. I had the same result. They still did the job but were pretty greasy.
I wonder how to prevent that...I have been thinking perhaps cooking at a lower temp. It sure does make packaging them individually for maximum freshness a lot easier IMO.

Oh, since no one has reviewed this brownie recipe, I used it. I made both THC infused and normal brownies. I did use Land-O-Lakes European Style Super Premium butter and Scharffen Berger cocoa powder which are the priciest variants at the local QFC so that may have had something to do with it, but these brownies are to die for! They taste like a dark chocolate fudge and with the ganache it makes them very strongly fudge flavored but with an enticing smoothness. I want to eat more after every one, even after a big meal when I know I couldn't possibly.

I had previously been using the KitchenAid recipe which is fairly similar but melting milk chocolate instead of cocoa powder and milk. I would use Ghirardelli chocolate bars in the recipe and always good butter. The only other thing I slightly changed from the recipe was that I used a Pyrex dish with no foil and just some olive oil non-stick spray. CannaCaramels sound amazing, but when you need to scratch that chocolate itch there are few things better than a damn good fudge brownie IMO.
