I love my carports.Yea man you can. Dr.d81s hoop house is the bees knees. Cheaper, sturdier, and better all around. If I never grow in a carport again, it will be to soon. I added 20 feet of 2x4s so far with metal strap to the sides, and got plastic stapled, then a top plate screwed on top keeping plastic secured. (in the pouring rain might I ad)
You just need to set them up correctly. "U" channels and wiggle wire are the key to keeping your plastic tight (no pooling). Use Greenhouse plastic and not some cheap-ass, Home Depot, 4ml plastic to cover. The key is not to grow to many plants under there, and keep the plants low (SCROG). I can only get 2 mature plants under a 20'x10' carport. Hell I have one plant that's poking out both sides of the 10' wide carport (I need wider carports). Yea the brick idea is no good, I have mine strapped down to Tee posts pounded into the ground to keep it from flying away in high winds. I also add 1/2" PVC to create more room under the greenhouse plastic (see pictures). Here's a few pictures without the covers over them. I'll put the covers over them once September gets here (tomorrow) and the weatherman says "chance of rain later this week". Then they go up.
On the flip side....
If you can build a @Dr.D81 type of greenhouse instead, for cheaper, then go for that. I think the Dr. did a nice job on his greenhouse.
Good Luck,
