I don't know why one would spend that kind of money to just cook it brown. You can get cheaper cuts that are fine for cooking past medium rare.

I only grill steaks and never past medium rare.

I like just a small amount of olive oil and salt and pepper. Maybe switch the salt for Jane's Crazy Mixed Up salt.

Damn, I might thaw a steak for lunch.

it tastes supposedly like a cross between venison and buffalo, but I have eaten neither. I'd describe it as gamey, and I am not a big fan.
cook kangaroo to a rmedium rare at most. it's gotta be one of ,yfavourite meats.

once I get outta this place I'm heading to the market gettingme roo for dinner

Ive never cooked a steak in a pan. I grill/smoke at about 180-200, but i am texan
I do both. This time of year, grill on the bbq outside. The secret to a perfect pan fried steak: Dry (no oil whatso ever) cast iron skillet, pre heated in oven at least 450F, then put on a gas stove at full burn. Drop the steak on flip after 1-2min, another 1-2 min and done....perfect blood rare with outside char
