what ballast to buy, best for the money.

What he is saying is that with Gavita you want to keep them further away from the plants canopy than your traditional Digital or Magnetic Ballast (This goes for both the 1000w and the 600w). As far as cooling them, it's just your room fresh air exchange set up that keeps them cool, there are no ducting attachments to the reflector, no in house fans on the ballast.

So for 1000W I want a ceiling higher than 8' to prevent bleach/burn? And if they can't be air-cooled, how do ya cool the room to keep the plants at a happy 78F?

Oh, and THANKS Jiji.
A big fan, and a big mini split

From Gavita tech support:

"There is a minimal distance between the lamp and the crop. For 600W this is 60cm/2 ft, for 750W this is 70 cm / 2 ft 4 inch, for 1000W this is 90 cm / 3 ft. In larger rooms with many overlapping lights the optimal distance is often even a bit further away."

If you have the ballast on reflector, this does hinder your crop height, because the bulb ends up being a fair amount lower than the ceiling. Having said that, I use 1000's on an 8ft ceiling.

Curable with the right reflector? Such as?
The reflector on the gavitas is great. Gavita just uses a different paradigm for lighting.

For instance, A sun system blockbuster air cooled reflector takes a standard HPS bulb. It focuses all that light down to a square 4x4 footprint.

Gavita coming from a commercial standpoint doesn't work that way. Their goal indoors is lighting uniformity with an average of 1000 umol m-2 s-1. This is done by using highly reflective walls and lighting the WHOLE grow room from wall to wall evenly. Whats critical is the layout of lights and overlap. The smaller the room, the harder it is to achieve.
That's just ideal though, I'm sure there’s some generality’s you can follow.

Do you accomplish that by tying 'em down to keep the canopy lower? Or selecting low growing strains?

I'm going to setup trellis to limit canopy height.

I'd like to see pics of how that comes out and whether that benefits or inhibits yield (or anything else).

Some say music can enhance plant outcomes so I thought about singing to mine. But first I have to be assured that cannabis plants can't throw tomatoes.

Quite a few things have to be changed around. It won't be for a while, but I'll try and take some photos.
