If using a heat mat under the cubes then 90f peak with probe between cube base and heat mat. The room would be around 80f.

I think the rockwool cubes and jiffy pads would not like the wet continual conditions?Cut the ribbed bottom out of your trays, leave a rim around edges as tall as the humps on your ribs. it will hold water and you grow long bubble cloner type roots.
So this is where the temperature difference comes in, here we are not sensing the temperature of the roots, but teh temperature of the air between tray and heating mat?I say 87-90f is where it's at. Slide the probe under the ribbed tray (between tray and mat)
Rapid Rooter plugs are best imo.
Your tray is thicker than mine. Play around with it, if anything I'd think the thicker tray with larger air gaps would insulate better. May have to put probe in the tray or turn it up a degree.
