which lights would you use..?

So I am building a new veg cab next week and have a few lighting options. The cab is going to be strictly for veg and there will be only three plants in it at a time. The cab will be 3' x 6' so each plant will have a 2' x 3' space. I use soil and do everything organically.

Here are my lighting options.

1.Three Sun Systems II Mini 250w MH fixtures.

2. One Hydrofarm Radiant AC, 400w Lumatek
Ballast & 400w EYE MH bulb ON A LIGHT
RAIL.

3. One Sun Systems XXXL 6" hood with 400w
Lumatek Ballast & 400w EYE MH bulb. (could be put on a light rail..)


What would you guys do..?
Any other suggestions..?
