It's a removal of the salts that could be present in the plants at the end. It is done the last week of flowering.

Well that's a different kind your talking about. There is veg flushing which is getting rid of nute lock or even just flushing the plant 3-5 times the pot volume, then there is flowering flushing which occurs in the final week. Same principle of removing salts or nutes but it is the final time so you want all nutes out. It makes for a cleaner burn and better taste. It is personal preference though, not everyone does it.
