Too much carbon?

Yes, you can use too much depending on the cfm of your fan.
I've never heard of carbon sheets before...where did you get these and what are they intended for? I'm thinking of carbon copy paper, like the old credit card receipts?....
Before you build your filter, you should find out the dimensions of a commercially made filter. Then build yours to the same surface area and bed depth to ensure proper performance.

at menards,removes pet oders,tabacco,cooking......120cfm,i was gonna wrap the carbon sheet around aluminum screen 4"end cap on one end,4" duct connector piece connected to wall with fan blowing in.Do you think if i filled it up with carbon it would be too much?The whole filter should only be 8 to 10"

I'm just running a couple layers of the sheet on my filter and it works like a charm! Here's a pic of mine...

Ahh...I see. Well thats gotta be the easiest diy filter I've ever seen. Whats the life span though?I believe the OP is referring to this type of carbon sheet...

My CF has one of those carbon pads wrapped around the inner mesh wire and outer, as well as about 5 pounds of activated carbon between them. It worked fine for 9 months for me and I just redid it, works great. Just make sure to use the prefilter that catches all the big dust and shit, that will allow it to last longer.
