SPICY hash! how do they do it?

so ive been researching many different ways to make some really tasty hashish and i was wondering if anyone had any input as to where really good middle eastern hash gets its spicy taste.

is it in the drying/curing or what kind of method do they use to make the hash taste so spicy and aromatic?

i know in a lot of middle eastern countries they just rub plants then sift them but im sure that takes quantity to produce. im thinkin like only 10 plants and dont want to waste resin and smokeability of the flowers by rubbing them for a "live" hash

ive tasted some really good hash before and ive also had hash from amazing buds that didn't taste nearly as good. ive got some bubble bags so im going to try that but ive also heard of dry sifting entire dried plants to get some really tasty hash. i want to make the most of the trimmings what method is best for taste fresh or dry/cured trim? live or dead hash?

is this mainly strain dependent?

but like i said ive had really insane bud but the hash tasted like crap. and many variations. ive also had hash that tasted like the inside of an indian food market and i love that smell/taste/ trying to figure out what makes it or if it just comes from the environment?
