Seeking advive

I have 3 sativas in full flower and they have at the very least a month before harvesting. My problem is I'm going away for over two weeks in November and I may have to do an early harvest. If I harvest the day before I leave and have them hanging upside down in my closet for 18 days should they be ok? Will curing the buds in a jar with a piece of vegetable for a few hours bring back the moisture? Any advice would be appreciated!

The biggest risk I would see you facing would be the chance of mold. You said you would hang them in a closet. Well closets aren’t exactly well known for their great air circulation. If there is much humidity and little air movement mold could be the result.
 
Most likely things will get over-dry in 18 days but herb can be somewhat hydrated again using various different things to do the same basic thing. One of my friends who is a lover of fine cigars will take a sponge and get it wet and then squeeze out all the moisture and then put it in a Zip-Loc bag with any dried out cigars he may have and they draw up the moisture from the damp sponge. Your piece of fruit idea is the same basic thing.
