So I have 2 plants around 24 inches tall. I was wanting to make room so I pulled out the veg lamps and threw the flower lights in the t5. That was a week ago, and I'm starting to see little leaves sprout out, but now I'm thinking maybe I should let them veg a little longer. But now it might be too late? Idk, will my plants freak out on me or will they never notice? Halp plz!

Bouncing the light regimen around can cause hermaphrodites, if that genetic is present. In many cases it is.
 
I see you swapped your lights out, did you also drop your light period to 12/12? Also, make sure there are no light leaks, if enough light gets in, you could have issues.
 
More importantly than the bulb switch, have you already put them on 12/12? Regardless, it should be fine to put them back into 24 or whatever cycle you had them on for veg if it's only been a week or so.
 
You didn't mention if you put them or not on 12/12 but I can clearly see preflowers and branches coming out, it's looking good if you have the space and haven't put them into 12/12. You could let them veg a bit longer and then flip!
 
Let it flower! The plant will stretch during the flowering process. Switching the light cycle back will possibly result in a hermie
