Couple things

should have planted in final pot

should have started LST earlier so those lower branches could have received light earlier.

Is it too stiff to bend or is it still pretty bend-able?

Bend it around, tie it down. Whatever you can do to spread it apart.

She’s about 2 and a half weeks and I did train for a bit but her leaves kept on hitting the soil
I can still bend her should I take some big fans off and pull the shoots down individually?

I'd move it to a bigger pot as soon as possible and try to LST it. I've trimmed a few fans off my autos and they seem fine, just don't go crazy and stress them out. The leaves on mine were touching the soil but they lifted towards the light after a few days and are fine.

How high was your light??
I had similar problems lately.. If the lights (i grow with cobs) are too near, plants get stocky, so you gotta keep raising it up..
And with so short veg time of autos, things can go wrong very soon..
