How to burry a stalk with out it rotting?

Got a girl ready to transplant, with no branches until about 14" up (yes nodes but no branching from them). I want to burry the big gap to save me head room but ive heard how you can rot the stalk. Ive heard if wet soil splashes up on the stalk it can rot it, if thats the case then hows it i see people burring plants up to the first branch. Tips tricks hints common sense that im just missing is much appreciated .

Please help need to transplant soon and would really like some tips experience with either

First transplant bury it up to the first 2 leaves. Should keep it from falling over.
Allow the soil to almost dry completely between waterings.
Upsize the container every 4 weeks or sooner if necessary.
For the 14 inches bury half the stem. Should be ok as long as you let the soil dry between waterings.

Rotting main stalk from wet soil? I transplant up to the first set of leaves and the only thing that happens is new root growth out of the main stalk that is now buried. Just transplant and you will be fine.
