How much should I defoliate these LARGE plants?

In wouldn't defoliate any further myself. I usually have a space between each plant outdoors for air flow, but those plants are nice and lolly popped, so they are good! They will defoliate naturally as the plant moves nitrogen from the lower leaves to the rest of the plant as the buds mature. Removing too many leaves deprives the plant of more readily available nutrients.

For sure...whatever yellows. Beyond that...those are definitely bushy/nice plants. If they were mine and I was gonna take anything off I'd shoot for the spindly stuff in the center of the plant that will never see the sun/will always be shaded... and all of the very lower clone-like sprouts/stemmage that will see the same fate (no sun to speak of) a few feet up. But as @mandocat says...you don't wanna remove too many leaves. They fuel the plant growth.

Looking good as is! I'd pull off anything yellowing, or starting to yellow. Just occasionally poke around the depths, make sure nothings lurking there and have decent airflow you should be a-ok.

I have been trimming my bush a little bit every week. I noticed that the fan leaves go to certain points but the littler leaves I feel carry the energy to the bud and fan leaves are to the plant. But I've been trimming for air flow and some light penetration.
Probably took a pound of wet leaves off over the course of a month and made a huge difference, took some off two days ago and she fattened up the buds overnight. Now to just keep it fed and watered for another 3 weeks.
