I prefer to trim off the bud leaves before putting the buds in my dryer. It's so much quicker and easier to manicure off leaves when the plant is fresh, not wilted. Once the plant wilts, the little leaves stick to your manicuring scissors and really slows down an already TEDIOUS job.
Like fdd2blk says, you can make hash out of the bud leaves, or you can simply dry & smoke them too. I don't like the flavour of leaf as it has so much more chlorophyll and cellulose by weight than resin. If you're going to make water hash out of your trimmings, save them in a plastic bag in the freezer until you have accumulated enough to make a decent amount of hash.
BTW, if you're going to sell your buds, don't even think about leaving bud leaves on them! No one wants to pay good money for leaf, even if it has visible resin trichomes. Moreover, leaf has very little weight when dried. Not worth leaving them on the buds- their weight won't be significant compared to the weight of the buds themselves.
Smokers make all sorts of judgments when they get a bag of buds. If it looks like shake was left in to increase the weight, you'll probably never see that buyer again.
