Harvesting Seeds

Hey everyone. I am a first time growerer and my first crop ended up coming out with seeds. When do you harvest seeds? Is there any special way to take out the seeds? I tried looking through the forums but I was not able to find any info about this. Any information is much appreciated. Thanks
