Harvest in 2 weeks -- Drying and Hermaphrodite Questions

I will be harvesting a little early due to time constraints in two weeks, this is my basic grow stats right now.

First I'll give you some information about my grow so far. Indoor grow, they started October 1st, so that makes them 46 days old (6 weeks, 3 days). I switched over to 12/12 light cycle on the 4th of October.

The medium is Miracle Grow Moisture Control Potting Mix, transplanted from a solo cup to the 5 gallon buckets when needed by.

Watering schedule has been about every 4 days or until top is totally dry. I use Schultz 10-15-10 Liquid Plant Food Plus for my nutes, I use the recommended amount. I FIMed them two days ago, but the problems have existed about a week before that. Current light setup is two 100w CFL bulbs angled towards each plant, and one 125w CFL to the side of the girls. They have been healthy all their lives, standing 30" tall now.

The problem that I have is that I'm leaving for winter break right after I harvest. Should I just let them dry (dark room, lots of ventalation) until I get back, how long does it usually take for the buds to be dry? Say I come back the spot a week later, would they be safe to put in bags without the chance of mold? How about it I put them in the freezer after a week of drying? Anyone have good suggestions for long term bud drying?

I have one female one herm which is still budding nicely, but you can tell it's fighting itself. How long does it take till the sacks burst open with pollen? If the one plant has been a herm for 3 weeks will I be safe till harvest? (2 weeks away).
 
it takes about a week to dry the buds, so it sounds like you'll be right on time, when you get back they'll be ready to toss into mason jars and cure, no need for the freezer

but what are you doing fimming so late in flower? you should fim during veg well before you even kick it in to flower

as far as the hermie, you should pick the sacks off carefully if you can.. they should be close to bursting if it's been 3 weeks.. but there won't be enough time for seeds to fully develop, you'll probably end up with a bunch of little white seeds
