Harshness

is there anyway to minimize harshness in the smoke?sometimes i get a batch that just seems far to harsh and choke the s_hit outa me.lol.
would water curing help?

Some type of curing is a must. Thats your answer if your not curing. I've never tried the water curing, I don't find the need. I just use glass canning jars. Even a 30 day cure makes a big difference in the smoke.
