No idea why you say what jar humidity is - us pros work on bud moisture instead in that once it dries to a low enough moisture content it can jar with no fear of mold.
I have yet to see anyone produce a reason to enclose bud in paper bags or freezer bags - mainly when bud releases moisture to dry that moisture will trap up in the bags and produce mold - even a poster above says not to overpack or you get mold.
Theres the easy way and theres the way that produces mold and bad tasting bud - you jarred to early and none of thats ever been good - try hanging dry till bud smokes well and taste great before you jar as a SIMPLE rule we have all followed since man first dried herb to smoke.
So that makes jarring and curing un-needed and a final product made from just drying long enough
