Jeezus … over stretched and lack of full medium.
Add more medium to not only feed them but to help stabilize the stalk.
As far as one leaf …shit happens. Mutations can happen …. Looks like that batch of seeds are consistent tho … most times it can grow out of it or later throw some pheno differences. Just keep on truckin
