actually i just encountered that same problem. for the past couple of weeks its been kinda cold here in texas, between 38-55 . but i hung my stuff up and it was dry in about 5-6 days. i have dried some stuff when it was hot this past summer and to "me" it dried a little bit better, in the cold. not as hard and crunchy, and it seems like during and after the cure it was just as good as the summer stock. so i say go for it, because "most of the time" when its cold the air is generally drier, depending on your location, but its usually more drier when its cold. hope that helps.
PEACE!!!!!
