Did I top this right?

There is the middle part of the top and there was 2 branches on either side. I snipped one of the branches off. Was that the right spot or do you cut that whole middle part off? My aim is to get 2 colas.

yeah you did it wrong...you cut that top piece off...i'd let it grow out another week at this point...the idea is to cut off the "middle" top so it directs its power to the two side nodes that are right below the middle section to create two tops

It's not a disaster. When it's grown out a bit, cut the top off the main stem and you will have an uneven set of side branches but it doesnt matter. Some LST will get them all to be about the same height.
