I'm making this thread because I'm sure there are plenty people on here who enjoy cooking but can't really afford to throw in q's or halves of bud so I've made this so people can discuss recipes and cooking methods that dont involve using up the precious herb.
Ok so I'll start with a recipe for a delicious easy to make chicken dish.
Ingredients; 4 chicken breasts/ parma ham/ soft cream cheese with garlic and herbs/ green or red pesto, green is better/ a lemon/ fresh basil/ cherry tomatoes/ olive oil.
Method; Begin by taking your chicken breasts and slicing them almost all the way through horizontally so you can unfold them.
Spread the cream cheese on the inside of two of the breasts and close them back up, fill the other two in the same manner with your pesto.
Wrap two pieces of parma ham around each chicken breast.
Place them into an ovenproof dish.
Put many basil leaves in with the chicken.
Cut your lemon into quarters and squeeze about half of the juices from each piece over the chicken and basil, place the remainder of the lemon skin and all in with the chicken.
Drizzle olive oil over it all.
Put it in the oven for 30 minutes at 190c.
The cherry tomatoes go in an oven proof dish, more basil in with them, olive oil and in the oven at the same temp for 10 minutes.
And thats basically it, serves 4, pasta or potatoes on the side work fantastically. Cut each breast inhalf before serving so everyone gets a piece with cheese in and one with pesto. Mop up those juices with a nice bit of crusty bread.
