Chop every strain at ten weeks?

I'm not exactly new but I felt like this is where the question belongs so hear me out

I have been growing at least one tiny crop a year for about five years...so I get the basics. I'm no pro but I know what I'm doing
Well I was smokin a j just now and a idea popped in my head!
Since most every hybrid takes about 63-70 days what if I just ran different strains and chopped everything at say 65 days
Sure there are true 8 weeks strains even a few that will finish faster than 56 but my idea was that 9 more days shouldn't hurt anything and I'm aware there are some 11 and 12 week strains but if u chopped a few weeks early it should still be a decent outcome ???
I'm just thinking out loud here but most strains that finish in 8 weeks are indica and letting them go longer you will make them real "Stoney" and most varieties that take 11+weeks are sativa leaning and by chopping them early you would make them more "racey"
Well what I look for in indica is a nighttime smoke to put me out and by harvesting late it degrades the thc but turns to cbd (I believe) and what I look for in a sativa is a morning smoke soaring high and chopping while trichs are clear still should have the desired effect from a sativa
There seem to be a lot of pros to this like for one I shy away from ordering 11,12 week finishers bc well it's a whole other month of growth before I can smoke it so by trying this I can expand my horizons so to speak bc I know I been missing out trying to finish at 8 weeks
Another thing is that usually (strain dependent) when you flip to 12/12 it takes a good 7-10 days to really start full flowering so by just counting 70 days or something from day you switched to bloom mode
You're not actually Too terribly far off from the breeders reccomended flower times.
One of the main reasons I like this idea is because I like to grow perpetually and by having a set date for every plant regardless of its technically finished or a little over ripe I can plan chop on time and place new plants into flower every two weeks
Think of 5 rows of plants and every two weeks you chop the whole row and put in another whole row. Usually u would be restricrted to plants with similar flowering time or even the same strain
I do realize there would be canopy issues I would try to combat them with an extra low scrog theoretically set it at 8" so the indices would be barely getting to 8 inches and the sativa a may be 14" when lights flip but but spreading them out would help my canopy

I also know that I'm gonna miss the sweet spot for some of the plants but some examples of are la confidential I had a awesome pheno and it was maximum potential at like 56 days but also ran a sour d that was best at like 77
These were both good smokes I liked them everyone loved them and I've grown them out several times so knowing the strain id say the la would be past done at 65 but wouldn't hurt it just tighten it up some hairs would shrink and it may ALL be Amber but I think I'd like it same with the sour I have chopped it at 65 before thinking it was done it got better and more distictive when I let it finish but it was still dank af the times I've chopped too soon
Anyways what do I know it may not work that great
I'd like to know what you all would think about this I know people do it all the time if I shouldn't do this tho explain to me why
