Im starting a grow room with 2 1000w lights on a 8x4 ft hanger. What would be more beneficial, 12 10gallon plants or 20 5gallon plants. Im prob vegging 60 days and have about 8ft ceilings. Any tips would be great

This all depends how big the plants actually get, which will depend on the strain although with 60 days of growth you should expect them to get big. Even after you initiate bloom you should expect the plants to double or potentially even triple in height (for Sativas). General rule of thumb is a gallon per foot. If you expect the plants to finish at 5 feet or shorter, then a 5 gallon container will do fine.

Also consider that working with ten gallon pots indoors can be a challenge if you need to move them around at all.

I'm thinking the 12 ten gallon pots, but then again, I'm all outdoors too. I'm sure someone will chime in and help you out. Good Luck with the grow !! :-P

Depends on how long you want to veg. In 5gal typically 2 month veg 3-4 zips. 10 gal 3 month veg 6-8 zips.
