I just finished a dry at 58to 60 f and 55 to 60 rh took 9 days no problems

Cool idea for the drying will give that a try in a couple months

I have a similar setup look into inkbird temp and humidity controllers they work great I put a variable speed controller on the exhaust fan for better control

7x6 should be enough to hold a nice snack
