I didn't take full leaves off, just broke the super dry tips off a few of the fingers. It's pretty easy to tell what parts of leaves still have life in them by just touching them lightly. I am using well water that comes out of the tap. It is usually about 7.5-8 ph that I use ph down to get to around 6.5.
