Would your girl be down for a scavenger hunt? You could have her go on a really elaborate scavenger hunt that eventually leads to you with the ring. I love scavenger hunts where one clue leads to the next clue leads to the next clue....

You could even combine the scavenger hunt and the fortune cookie. Have the scavenger hunt lead her to you at a nice chinese restaurant, and she'll think that you taking her out is the surprise. Then at the end you surprise her again with the fortune cookie!
