roseval potatoes, parsnip and pumpkin roasted in oven +
sautéed belgian endive
covered in rosemary beef sauce

I was going to make beef stew for supper but….one thing after another….and all we had was cornbread. It was good corn bread and that’s all the wife was going to eat anyway so it worked out.
I’m looking forward to Monday’s menu, fried pork chops, collard greens ( fresh from the garden ) pintos and cornbread. I know I’m supposed to cook black eyed peas but Tuesday will be tacos and the refried beans will be already cooked ( planning ahead ).
