I’d hate comparing but on doing some research they say that by day 7, their seedlings already got like 2-3 set of leaves?
Is that true?

mine stil got that same mini set of 1st blades and it’s day 5 now..

I also removed the q-tip support & added soil around the leggy one for support.. although it was already supporting itself thanks to the help of the q-tip (i guess better rooting)

The are probably talking about a very aggressive plant in the best conditions. Where your just winging it, she will be slower. Be patient. You've just started a marathon.

Let them get used to sunlight by putting in shade for a few days, uv gets them in shade too, they need to see blue sky not sun yet. Sun will kill them fast if not hardened off. There are always acceptions to this rule. But it works!

When started under florescents indoors, l do. Well l have a spot where they can see the sky but no direct sun. Drop a seedling in full sun see what happens. From a weak light. Shell fry.
