I put salt, pepper, and garlic. Then I added fresh rosemary to the bag before sealing. Normally I’ll add rosemary and butter to the pan towards the end of the cook. But since I’m using sous vide I’m gonna sear it really hot and fast on the grill at the end. I’m aiming for a perfect medium rare.Man, that sounds good, what's on it? Salt pepper rosemary? That's usually what I do, plus sage. And garlic, lots of garlic. I haven't had a steak in weeks. I'm gonna have to grab me a porterhouse next time I go shopping, thanks Gary.

Almost exactly what I have on tap, sans lemonI got a thick cut pork chop sitting on the counter that's been seasoned for a few days. Gonna throw it in cast iron to sear it, then into the oven till it hits 140F. Then finish it in butter, rosemary, fennel and lemon. Got some parsnip to go with it, some cornbread and a double bock. Mmmm mmmm good.
