Get a proper pH meter, and then check my journal for a tutorial on how to test the soils pH. Dolomite lime doesn't need to break down, it buffers the ph AS it is comprised of Calcium carbonate (and Mg). It will take a long time to leech out, so it will keep the pH stable for a good long while. In soil, anything between 6.5 and 7.5 is going to be fine and not cause any lockout issues, with 6.8 being ideal. But you DO need a decent to good pH pen like a Hanna.
