I'd say with 16kwh of solar you would not be able to go 100% off grid with your current op. IMHO I'd aim for more 20-40kwh of solar as then it gives you more leeway (i.e. each panel doesn't have to be at 100% efficiency)
Furthermore unless you purchase 30-60kwh of batteries it will mean you...

I've contacted this guy, he seems pretty legit however the COBs that he is selling seem to be from a few generations ago?
They are selling CLU046-1212C1-353H5G3, these seem to be generation 4 COBs, and at 2amps, 25tj they produce 8445 lm with 76.1w(https://i.imgur.com/CHFHkHN.png)
